Kinmen Kaoliang Vinegar is a spin-off product of the Kinmen Distillery (Kinmen Kaoliang Liquor Inc.), made by taking the distillation lees left over from brewing kaoliang liquor and subjecting them to a further liquid acetic acid fermentation. The acidity is milder than ordinary rice vinegar, carrying a faint charred-grain character unique to sorghum. It can be used in dressings and cooking or diluted and drunk straight as a health tonic. It represents the complete utilization of the Kinmen Distillery's production line — a demonstration of the craft principle that no byproduct goes to waste.

What is Kinmen Kaoliang Vinegar

After sorghum is distilled for liquor, the remaining solid or liquid lees are rich in organic acid precursors and residual sugars. Kinmen Kaoliang Liquor Inc. transfers these lees into acetic acid fermentation tanks, inoculates them with acetobacter cultures, and allows fermentation to continue until the target acidity is reached, then filters and bottles the product. The finished vinegar is approximately 4–5% acidity and a pale amber color.
