Chishang rice is not only for bentos. The Rift Valley basin flanked by the Coastal Range and the Central Mountain Range, the unpolluted Xiuguluan River water for irrigation, the rice quality drawn out by wide diurnal temperature swings — these conditions give mochi made from Chishang Koshihikari and Taigang No. 9 an extra layer of the grain's own natural sweetness: softer and springier than commercial versions, not sticky on the teeth, with a delicate rice fragrance that lingers after each chew.

What is Chishang Rice Mochi?

Chishang rice mochi uses locally grown Koshihikari or Taigang No. 9 round glutinous rice as raw material. The rice is soaked, steamed, then pounded repeatedly in a stone mortar or machine until the grains fully fuse into a smooth, glossy dough. The outside is coated in soybean powder, peanut powder, or sesame powder; fillings include red bean paste and peanut butter. The finished surface is dry and does not stick to the hands. Each bite delivers a distinct rice fragrance and lingering sweetness, with a fine, bouncy texture. Compared with ordinary commercial glutinous mochi, the rice flavor is more pronounced and the sweetness more restrained.

The Chishang Township Farmers' Association is the most important quality guarantor for Chishang rice. Its agricultural specialty products exhibition and sales center is the most concentrated place to buy, also carrying mochi, rice crackers, rice vinegar, and other Chishang rice derivative products. In recent years, local small-farm brands such as Yuji Farm have introduced hand-crafted limited editions using the traditional stone-mortar method to emphasize the difference in process. Chishang rice is processed year-round regardless of season, and mochi is available all year with no seasonal restriction.
