Zhushan is Taiwan's largest Moso bamboo production area; the Farmers' Association kiln-fires bamboo at high temperatures to produce food-grade bamboo charcoal, which is mixed into the traditional tofu-making process, turning the tofu from snow-white to deep gray. The charcoal does not make the tofu taste like carbon — instead it draws out a subtle, barely-there sweetness as a base note, and this has made the tofu one of Zhushan's most recognizable souvenirs.

What Is Bamboo Charcoal Tofu

Food-grade bamboo charcoal is made by kiln-firing Moso bamboo at over 800°C and grinding it into a fine powder; it has a porous, adsorptive structure and a flavor profile that is neutral with a slight sweetness. In tofu production, the charcoal powder is added before coagulation, blending evenly into the solidifying curds; the result ranges from dark gray to near-black in appearance with clearly visible internal grain.
