Step onto Wufu 4th Road in Yancheng and a faint fruitwood smoke drifts through the air. Golden smoked ducks hang from the wooden counter; the owner's cleaver rises and falls, slicing the breast and leg into thin pieces laid over white rice doused with duck drippings, with a bowl of offal soup on the side. What is Duck Meat Rice?

Kaohsiung's duck meat rice is a set combination: a smoked duck platter, duck dripping rice, and offal soup. The duck is first lightly smoked over fruitwood for aroma, then steeped in braising liquid, and carved to order into thin slices laid over white rice or rice noodles drizzled with duck fat and drippings.
