Hengchun's four city gates have stood for a hundred years, but the street stalls beside them stay closer to everyday life. Braised pork rice is Hengchun people's default choice for lunch: pork belly slow-braised in soy sauce, rock sugar, and rice wine until the collagen in the skin turns translucent and glossy, poured together with the thick braising liquid over white rice — savory, sweet, and deeply fragrant. One bowl can stop travelers passing through in their tracks.

What is Hengchun Old Town Braised Pork Rice

Braised pork rice features skin-on pork belly as the star ingredient. The whole cut is first seared in oil until the skin is lightly browned and colored, then transferred to a braising pot and slow-cooked over low heat in soy sauce, rock sugar, star anise, and rice wine for at least two hours. The result: soft, yielding skin, fat that is half-rendered, and meat that is thoroughly flavored yet not dry. Sliced and laid over steaming white rice with the original braising liquid poured over the top; some old stalls also include a braised egg and pickled mustard greens, adding layers of texture and flavor — the Hengchun take on Taiwanese slow-braised pork rice.

The Hengchun Peninsula has had a tradition of pork cooking since settlers arrived in the Qing Dynasty, and the old street beside the old town gates formed as a historical community hub, with food vendors establishing roots here for decades.
