Braised pork rice features skin-on pork belly as the star ingredient. The whole cut is first seared in oil until the skin is lightly browned and colored, then transferred to a braising pot and slow-cooked over low heat in soy sauce, rock sugar, star anise, and rice wine for at least two hours. The result: soft, yielding skin, fat that is half-rendered, and meat that is thoroughly flavored yet not dry.
