Strings of oyster shells sway in the tidal current as the meat slowly fills inside, building up quietly until it's plump enough to be pried open — destined for the egg batter of an oyster omelette, the battered coat of an ô-jiá fritter, or to slip straight into a bowl of noodle soup.
What are Linbian Oysters
The tidal flats along Linbian Township's coast and the Linbian River estuary are the main oyster farming area, using bamboo-frame rack-and-string or longline cultivation methods. Linbian oysters have plump meat and moderate salinity; thanks to the rich organic matter at the estuary, they are slightly sweeter than oysters raised purely in seawater. The three most common preparations are oyster omelette (oah-jian, pan-fried with sweet potato starch and egg batter), ô-jiá (oysters stuffed into chive-batter fritters and deep-fried), and oyster vermicelli (added to sour-and-savory pork intestine noodle soup).
