The tidal flats at the mouth of the Linbian River are the best cradle for Linbian oysters. Freshwater brings rich organic matter; seawater brings salinity. Where the two meet, half a century of oyster farming culture has grown. Strings of oyster shells sway in the tidal current as the meat slowly fills inside, building up quietly until it's plump enough to be pried open — destined for the egg batter of an oyster omelette, the battered coat of an ô-jiá fritter, or to slip straight into a bowl of noodle soup.

What are Linbian Oysters

The tidal flats along Linbian Township's coast and the Linbian River estuary are the main oyster farming area, using bamboo-frame rack-and-string or longline cultivation methods. Linbian oysters have plump meat and moderate salinity; thanks to the rich organic matter at the estuary, they are slightly sweeter than oysters raised purely in seawater. The three most common preparations are oyster omelette (oah-jian, pan-fried with sweet potato starch and egg batter), ô-jiá (oysters stuffed into chive-batter fritters and deep-fried), and oyster vermicelli (added to sour-and-savory pork intestine noodle soup).
