In July, restaurants along the Penghu coast add a limited item printed in red on their menus — ma-fen sea urchin. Crack open the dark purple spiny shell and inside are five golden lobes of sea urchin roe, gleaming like gold leaf. Scoop one spoonful and place it directly on your tongue — the briny sweetness and buttery smoothness dissolve in an instant. This is Taiwan's finest sea urchin, with only a brief two-month open season for harvesting in Penghu's summer waters. Miss it, and you wait another year.

What is Penghu Purple Sea Urchin

The purple sea urchin, known locally as "ma-fen hai dan" (scientific name: Tripneustes gratilla), gets its colloquial name from its black-purple color with long spines, said to resemble horse dung. It is the most plump and richly flavored sea urchin species found in Taiwan's waters. The edible part is the five-lobed gonads inside, which range from golden to orange-yellow in color. The flavor is fresh and sweet with a hint of brine; it melts on the tongue with a creamy, velvety texture and is often called the "gold of the sea." The coral reef waters of Penghu yield the greatest abundance; eaten raw, stir-fried with egg, in sushi, or in miso soup are all classic preparations.

To protect the population, the Penghu County Government strictly limits harvesting of purple sea urchin to July 1 through August 31 each year, and only individuals with a shell diameter of 8 cm or more may be collected — violations carry heavy fines. The coral reef waters of Xiyu Xiaomen and Dongji Islet are the primary production areas; restaurants in Xiaomen village offer summer-only seasonal sea urchin scrambled eggs, where raw urchin is spooned over freshly cooked soft scrambled eggs, amplifying the natural sweetness directly. After September, fresh in-season purple sea urchin is no longer available in Penghu; what's sold at that point is mostly frozen or farmed product, with a noticeably different flavor.
