Douliu Lamb Rice Cake is the most distinctive traditional snack in Douliu City, the seat of Yunlin County government. Steamed glutinous rice is paired with braised lamb, shrimp paste, and a braised egg yolk, producing a sticky, satisfying texture. The lamb is braised for a long time to remove any gamey odor, making it approachable even for diners who do not normally enjoy lamb. Dong Shi Lamb, which has been operating for more than sixty years, produces a daily limit of around 180 portions. What is Douliu Lamb Rice Cake

The glutinous rice is steamed in a large wood-fired pot until soft and sticky, then mixed with braised lamb, dried shrimp, and fried shallots for fragrance, and finished with a braised egg yolk to add richness. The braised lamb uses Taiwanese black mountain goat or local sheep, slow-braised in soy sauce, rice wine, and star anise until the sauce reduces and the gamey notes nearly disappear, leaving a deep, sweet meat flavor. The overall texture falls somewhere between oil rice and tube-shaped glutinous rice cake — a signature Douliu formula that is difficult to reproduce elsewhere.
