What is Taichung-Style Dan Zai Noodles
Taichung dan zai noodles use thin oil noodles or rice vermicelli as the base, topped with a dark minced pork sauce slow-cooked from ground pork, soy sauce, and rock sugar. The broth varies by stall and may include a shrimp head base. The hallmark of the Taichung version is a generous quantity of minced pork — deep reddish-brown in color, savory and sweet with five-spice notes. Some stalls add braised egg, diced tofu, or other toppings. The overall style is heartier and saltier than Tainan's dan zai noodles, sitting closer to braised pork noodles on the flavor spectrum rather than the light, clear-broth style.
Nantun was historically called 'Litoudian' and is one of the earliest developed townships in Taichung. Nantun Old Street (Wanhe Road) retains the traditional temple street layout, and Wanhe Temple serves as the local center of worship. Dan zai noodle culture traveled north from Tainan and underwent local adaptation across Taichung. The Nantun area's version was shaped by local ingredients and flavor preferences, developing into a heavier, more braised-sauce-forward style.
